Vegetable Alphabet Soup

I will be honest and say that most of the time my kids willingly eat vegetables, so please don’t think that this is some magic soup that will get your veggie hating kiddo to start eating vegetables. There were those that picked out some random vegetables, and others who ate the entire thing and asked for seconds! But as an adult who loves to eat my vegetables I enjoyed it! Vegetable soup is my easy go-to soup when I forget to thaw meat and my vegetable drawer is looking sad. It’s a great way to clear out veggies right before your next grocery run. I’ll post how I made mine, but this is one of those recipes that you can switch things around and you really can’t mess it up! Just use what you have on hand!

Ingredients

Serves 4

  • Chicken Broth (32oz)
  • 1 Can of Diced Tomatoes
  • 2 Cloves of garlic
  • 2 Bay Leave
  • 1/2 of a Large White Onion Diced
  • Vegetables (I used, 2 Large Carrots, 2 Stalks of Celery, 2 Red Potatoes, 1 Cup of frozen Green Beans, 1 Cup of Frozen Corn, and 1 Zucchini)
  • Handful of Fresh Parsley (Chopped)
  • 1/2 Cup of Alphabet Pasta (or any tiny pasta)
  • Parmesan Cheese

Recipe

  • Chop all vegetables to a similar bite size.
  • Set a pot on medium-high heat and drizzle in a little veggie oil.
  • Stir in onions and garlic until fragrant.
  • Add carrots and potatoes until they get just a little color on them. Don’t let anything burn!
  • Season with some salt and pepper.
  • Pour in the chicken broth, tomatoes, and bay leaves and turn down to a simmer. Let it simmer for about 5-7 minutes.
  • Add in pasta.
  • After 5-7 more minutes add in the frozen green beans and corn (you might want to turn the heat up to bring the temperature back up).
  • After another 5-7 minutes add the zucchini and parsley.
  • Let all of that simmer together for 5-7 more minutes and then serve! (just check to make sure things like the potatoes are fork tender and the pasta is cooked through. Also give it a taste and add some last minute salt and pepper if you need to.)
  • Top your bowl off with a sprinkle of parmesan cheese.
You might notice the lack of corn in my soup, despite my ingredients listing it… well the night I made this for photos I opened my freezer to get it out only to find it wasn’t there… ugh. And just to pour salt in my wounds, a couple weeks later I actually found the corn in my freezer, apparently I just didn’t look hard enough.
