Pickled Onions
Ingredients
- Half of a Medium Red Onion thinly sliced
- 1/3 Cup Grated Beet (Completely Optional)
- 1 tsp Peppercorns
- 2 Cloves of Garlic
- 1/3 Cup White Vinegar
- 1/4 Cup Apple Cider Vinegar
- 1/2 Cup Water
- 1 TBS Sugar
- 1 tsp Salt
Instructions
- Place the Sliced onion in a container along with the garlic and peppercorns.
- Place the Beet, white and apple cider Vinegar, Water, Sugar, and Salt in a saucepan and bring to a simmer.
- Strain out the beet and pour liquid over the onion making sure it is completely submerged.
- Let it come to room temperature before placing in the refrigerator.
- Let it sit for a few hours before using.
I love having Pickled Onions on hand, we use them on everything! Sandwiches, salads, tacos, pork steaks, pulled pork, burgers, kofta, black eyed peas….etc. Honestly anything heavy tasting that just needs a little brightening up! They don’t have as strong of a flavor as Pickles, so I think they are more versatile.
