Pulled Pork

Hello CC moms! I just wanted to make sure to get this recipe to you all quickly, so I’m sorry it will look a bit naked without some glamorous food photos. But I figured, since you all have sampled the food I won’t have to convince you with pretty pictures!

Ingredients

  • 7-9lb Bone in Pork Butt
  • Spice Rub:
    • Cumin 1 TBS
    • Garlic Powder 1 TBS
    • Onion Powder 1 TBS
    • Cayenne 1 TBS
    • Paprika 1 TBS
    • Salt 1 TBS
    • Pepper 1 TBS
    • Brown Sugar 2 TBS
  • Brine:
    • 2 Quarts of water
    • 1/2 Cup Coarse Kosher Salt
    • 1/2 Cup Brown Sugar
    • 3 TBS of the Spice Rub
    • 4-6 Bay Leaves

Instructions

  • Rinse your pork and use a knife to prick it all over.
  • Place the pork in a container with the brine and let it brine in the refrigerator for 24 hours. 12 hours minimum.
  • Take it out, dry it off, and press the rest of the spice rub all over. Completely cover the entire pork.
  • Place it in a roasting pan, fat side up, uncovered, in the oven at 225°.
  • Cook for about 1-1.5 hours per pound or until an internal thermometer reads 200°.
  • Turn the oven off and cover with foil and let it sit in the oven for 2 hours.
  • Shred it in a separate dish and enjoy!! (you might want to save some of the dripping if you plan on keeping leftovers in the freezer)

I love to make a little extra spice rub to sprinkle while we eat. This pulled pork is so versatile! We have used it for sandwiches, tacos, breakfast bowls, on top of Mac and cheese….the possibilities are endless! It also freezes really well, I just recommend pouring in a little of the extra fat before you freeze it. Enjoy!
