St. Patrick’s Day Sides

Okay all of these recipes are going to be really simple and won’t have much detail. But when I’m doing a big meal like this I usually opt for simple sides.

Garlic & Dill Red Potatoes

Ingredients:

  • 1.5 Red Potatoes
  • 2 TBS Butter
  • 2 Cloves of garlic (put through a microplane, or minced the old fashioned way)
  • 1 tsp Dry Dill (or 1 TBS fresh)
  • 1 TBS Fresh Chopped Parsley

Instructions:

  • Cut Potatoes into 1.5 inch pieces. I quartered most of mine.
  • Bring a pot of salted water to a boil and add potatoes. Boil for about 20 minutes, or until fork tender.
  • While boiled the potatoes add the garlic and butter to a small saucepan over medium-low. Let that bubbly happily, but not enough to brown the butter.
  • Drain the potatoes.
  • Add the dill to the butter and garlic, and then pour over the potatoes.
  • Top with a sprinkle of parsley and salt and then serve!

Roasted Cabbage

Ingredients:

  • 1/2 Cabbage (this feeds my little family of 5 because most of them opt out….)
  • Olive Oil
  • Garlic Powder
  • Salt

Instructions:

I know, the ingredients are lacking, but you’ll see why…

  • Preheat oven to 400°
  • First peel layers of your cabbage until its clean.
  • Lay it on the cutting board stem side up and slice it in half. From there slice the half in half again. Take each quarter and slice them into 3 wedges.
  • Place those wedges on a baking sheet lined with parchment.
  • Rub them with olive oil.
  • Sprinkle with garlic powder and salt. This is why I don’t give a measurement, it’s nothing exact, just to your taste.
  • Place in the oven for 45 minutes, until they get a nice brown color!
  • SERVE!

Roasted Carrots

You can put these on the same baking sheet at the Cabbage!!! Again, I’m not going to throw out measurements here, you all are grown, you can manage!

Ingredients:

  • Carrots
  • Olive Oil
  • Oregano
  • Thyme
  • Salt

Instructions:

  • Preheat oven to 400°
  • Rub with olive oil.
  • Sprinkle on oregano, thyme, and salt.
  • Bake for 45 minutes.
  • Serve!
